Packed with vibrant veggies, creamy avocado, and the rich taste of Mex-Al Ranch Dressing, this recipe is quick, healthy, and flavorful. All it takes is a good shake – and you’re ready to enjoy!
Ingredients:
For the salad:
- 1 cup mixed greens (e.g., romaine lettuce, spinach, kale, or arugula)
- 1/2 cup shredded red cabbage
- 1/2 cup roasted corn kernels
- 1/2 cup cherry tomatoes, halved
- 1/4 cup thinly sliced cucumber
- 2 tbsp finely chopped red onion
- 1/2 avocado, diced
- 1 tbsp fresh cilantro, chopped
- 2 tbsp crispy tortilla strips or toasted pumpkin seeds (optional)
For the Ranch Dressing:
- 1 1/2 tbsp Mex-Al Ranch Dressing Mix
- 1/2 cup plain yogurt (Greek yogurt for extra creaminess)
- 1 tbsp milk (adjust to desired consistency)
- 1/2 tbsp fresh lemon juice
- Black pepper to taste
Preparation:
- Prepare the Ranch Dressing:
In a small bowl, mix the Mex-Al Ranch Dressing Mix with plain yogurt, milk, and lemon juice until smooth and creamy. Season with black pepper to taste. - Assemble the salad:
Add the mixed greens, red cabbage, corn, cherry tomatoes, cucumber, red onion, and cilantro to a large bowl with a lid. - Add the dressing:
Pour the Ranch Dressing over the salad ingredients in the bowl. - Shake it up:
Secure the lid tightly and shake the bowl vigorously for 10–15 seconds until all the ingredients are well coated with the dressing. - Top with avocado and garnish:
Remove the lid and place the diced avocado on top of the salad. Garnish with tortilla strips or toasted pumpkin seeds if desired. - Serve and enjoy:
