FAQ's

1 Why do we not ship to individuals outside of Germany?

Unfortunately, we do not currently ship to private customers outside of Germany. This is due to the complicated tax regulations within the European Union (EU). As soon as our sales to private individuals in other EU countries exceed a certain threshold, we have to register for VAT there and pay the taxes locally.

Since the tax rates are not harmonized within the EU, we would have to check each item individually for its tax rate in each country. We ask for your understanding that we cannot participate in this overly bureaucratic procedure.

Thank you very much for your interest in our products.

2 Why do you not send any of your products that contain meat through the postal service?

We do not ship meat-based products by mail because the safety and quality of our products is our highest priority, and meat-based products require a continuous cold chain to ensure freshness and safety.

In transit, which typically takes 1 to 3 days, they can thaw and promote bacterial contamination. For this reason, we offer meat products exclusively in our stores to ensure that you are always provided with fresh and first-class products.

You can find us in Aachen, Feldchen 12 and in Forchheim, Bügstraße 87. We thank you for your understanding and look forward to welcoming you personally in our stores.

3 Why can you ship tortillas, avocados and cheese by mail?

We are able to ship tortillas, avocados and cheese by mail because these products are less susceptible to rapid spoilage compared to meat products. This means that tortillas, avocados and cheese will not spoil as easily during the two to three day shipping process and will arrive thawed and ready to eat.

In order to ensure that this transit time is not exceeded, we have limited the shipping of frozen foods to certain days of the week to ensure that they arrive in good condition.

4 What are the opening hours?

Our opening hours are from Monday to Friday, 8:00 am to 5:00 pm. We look forward to welcoming you during these times and will be happy to assist you.

5 Why and how should I make a Molcajete food safe?

To prepare your mortar (Molcajete) for use with food and to ensure that no traces of stone remain, follow these steps:

1. wash first: Wash the mortar with warm water and a stiff brush.

2. grind the rice: Add raw rice and grind over the entire surface of the mortar.

3. rinse: rinse the mortar to remove any residue.

4. grind garlic and salt: Grind garlic and coarse salt in the mortar to condition it.

5. rinse again: Rinse the pestle and mortar again.

6. dry: Allow the pestle and mortar to air dry.

Or simply grind coarse salt and uncooked rice alternately until there are no stone particles left. Do this until either salt or rice powder is completely white and free of impurities. Finally, rinse the mortar and pestle with warm water and air dry.

6 Why is it only possible to send frozen food from Monday to Wednesday?

For organizational reasons, frozen products can only be shipped until Wednesday. This is due to the sensitivity of our products, as frozen food usually takes 1 to 3 days to ship. If products are shipped after Wednesday, there is a risk that they will remain in DHL's distribution vehicles over the weekend. This would affect the quality of our food.

Our top priority is to ensure that you always receive fresh, high-quality products. That's why we want to make sure that your frozen food is delivered during the working week. This way we avoid potential problems.

Thank you for your understanding and support.

7 How to use the plastic tortillaserver?

How to use the plastic tortilla server:

1. place defrosted or frozen tortillas in the tortilla server.

3. heat the plastic tortilla server in the microwave at high power for 30-45 seconds (for approx. 10-12 tortillas) or until the tortillas are warm and pliable.

11 Why should you use plastic wrap (or parchment paper) when using a tortilla press?

Using plastic wrap in combination with a tortilla press has several advantages:

 1. Hygiene: The plastic wrap protects the corn dough from direct contact with the metal of the tortilla press. This is very important because it prevents contamination of the dough, which would compromise the safety of the tortillas.

2. easier handling: the dough is easier to remove from the film.

 3. Longer life: By protecting against wear and contamination, the use of plastic film can extend the life of your tortilla press.

 4. easy cleaning: Cleaning the tortilla press is made easier because the film can be easily removed and disposed of after use.

Overall, the use of a plastic film contributes to a more efficient and hygienic operation of the tortilla press and makes it easier to prepare corn tortillas.

12 How do I heat the corn tortillas properly?

Our corn tortillas are best heated using the following methods. Ideally, defrost the tortillas overnight in the refrigerator to prevent them from cracking and drying out. If you are pressed for time, you can microwave the tortillas in a resealable bag for about one minute.

Here are the different reheating options:

1. Skillet:

   - Heat a cast-iron skillet over high heat and flip the tortillas several times until they are hot and soft.

   - Immediately wrap in a clean cloth and place in a Tortillero.

 2. steam:

   - Wrap about 30 tortillas (frozen or thawed) in a tea towel and steam in a skillet with a strainer over medium heat for about 10 minutes or until very hot.

   - Alternatively, you can microwave the tortillas in a plastic bag on high for about 2 minutes.

   - Once heated, immediately wrap the tortillas in a cloth and store in a Tortillero.

3. Microwave:

  - Place 10-15 tortillas (frozen or thawed) in a Tortilla-Server and microwave for about 1 minute.

To prevent the tortillas from getting cold, dry or cracked after heating, wrap them immediately in a cloth and store them in a Tortillero or airtight container.

You can also find the instructions for reheating the tortillas as a video on our social media channels (Facebook, Instagram, YouTube).

13 Why are certain tortillas recommended for soft tacos?

All of our tortillas are delicious, but can be used differently depending on the type. Please check the information in the product description.

For soft tacos, we recommend our white, red, blue, green and a single yellow tortilla variety. These tortillas become soft and pliable when heated, making them ideal for making soft tacos.

14 Why are only some of our tortillas recommended for frying?

We recommend that only our yellow tortillas be used for frying.

They are ideal for frying tacos, tostadas and chips because the yellow corn used in them absorbs very little fat, keeping the tortillas crisp.
