It is no secret that chillies are a mainstay of traditional Mexican cuisine.  What only few know is that in Mexico a lot is cooked with a delicious variety of dried chillies. There are about 4000 different varieties, divided into five "Capsicum species" and another 28 wild forms. Excellent for cooking and seasoning food is our variation of authentic, dried chiles from Mexico. When Christopher Columbus brought the chilli back from his journey, it became known in Europe as "black pepper". In the meantime, they have long since become popular all over the world in almost all colours and shapes.
