Gluten-Free Chickpea Polvorones with Pecans

Celebrate the flavours of autumn with these delightful chickpea Polvorones – tender, nutty and wonderfully aromatic. Made with chickpea flour, they’re not only full of flavour but also completely gluten-free! The combination of butter, vanilla and pecans makes them the perfect companion to a relaxing afternoon coffee or tea.

Ingredients:

Ingredients (for approx. 24 pieces):
• 226 g soft butter
• 2 tsp vanilla extract
• 60 g sugar
• 170 g chopped pecans
• 250 g chickpea flour
• 110 g icing sugar for coating

Preparation:
  1. Preheat the oven to 175 °C and line a baking tray with parchment paper.
  2. Prepare the dough: Cream together butter and sugar, then add vanilla. Stir in the pecans and chickpea flour until a smooth dough forms.
  3. Shape the cookies: Form small balls and place them on the baking tray, leaving some space in between.
  4. Bake for 10–12 minutes, until the bottoms are lightly golden. Let cool briefly.
  5. Dust with icing sugar and serve.
  6. These Polvorones taste best once completely cooled – that’s when their delicate, melt-in-your-mouth texture truly shines.
