Tacos de Canasta, or basket tacos, are a traditional Mexican dish served stacked in layers inside a basket and drizzled with hot oil. Their soft and juicy texture makes them perfect for sharing or taking on the go. In this recipe, we show you step by step how to prepare three fillings – beans, chorizo & potatoes – and how to assemble them in the basket, topped with Guajillo oil and onions for authentic flavor.
Ingredients:
For the tortillas:
1 pack yellow corn tortillas 6" (60 pieces)
2 large onions, sliced
For the guajillo oil:
1 cup vegetable or canola oil
1 tbsp guajillo paste
For the beans filling:
1 can refried bayos beans (430 g)
1 small onion
1 pack bacon
1 tbsp oil
Salt
For the chorizo & potato filling:
4 large potatoes
400 g mixed ground meat
1 small onion
1 garlic clove
8 tsp Mex-Al chorizo seasoning
2 tbsp water
1 tbsp guajillo paste
1 tbsp oil

Preparation:
- Prepare basket: line with foil, add a clean cloth, a plastic bag, and paper between layers.
- Beans filling: chop onion and bacon, sauté onion, add bacon and beans, cook 5 min, season and set aside.
- Chorizo & potato filling: cook potatoes al dente, peel and dice, sauté onion & garlic, add meat, spice & Guajillo paste, add potatoes, cook 10 min, add water if needed, set aside.
- Guajillo oil: heat oil with 1 tbsp Guajillo paste, keep warm on low.
- Assemble tacos: heat tortillas, fill, fold, layer in basket, top with onions & oil, repeat layers until finished. Close basket, let rest 1 hr.
- Serve with green or red sauce.
