Champurrado light & sugar free

Champurrado is one of the most ancient drinks in Mexico. This hot beverage prepared with chocolate, corn dough and water, was prepared by the Aztecs to be consumed during rites and festivities. Today it is still prepared with chocolate and masa or nixtamalized corn flour as a base, except that milk can be added instead of water, as well as piloncillo and spices such as cinnamon, anise or vanilla. In its modern preparation, it is usually made with too much sugar, so we developed a simple recipe to prepare it without sugar and sweetening it only with a little agave syrup. We hope you enjoy it!

Ingredients:

2 liters of water

120 g nixtamalized white corn flour

200 ml water

cinnamon to taste

agave syrup or sweetener to taste *optional

50 g chocolate Mayordomo without sugar

Preparation:

Boil the water with the cinnamon for 5 minutes. Add the chocolate and let it melt, stirring occasionally.

In a bowl, dissolve the corn flour with the 200 ml of water until you get a slightly viscous mixture (if necessary, you can add more water when the consistency is too thick).

Add the sweetener of your choice, we used agave syrup.

Finally, bring the chocolate-cinnamon mixture to a boil and gradually add the corn flour mixture, stirring constantly. Cook until thickened. Enjoy hot.
