Chicken in chipotle sauce

The popular tomato, better known in Mexico as the jitomate, is a fruit native to the Americas, which has been cultivated by the Aztecs since ancient times and is therefore an integral part of Mexican cuisine, just like chilies. Thus, it is not surprising that many Mexican dishes are based on these two ingredients. Here is a simple recipe for a tasty chicken in chipotle sauce that can be prepared in no time.

Ingredients:
  • 400g chicken breast
  • 1 400g jar of Chipotle Mex-Al Sauce
  • 1 onion, finely chopped
  • 1 clove of garlic, finely chopped
  • 1 red pepper, diced
  • 2 teaspoons of oil
Preparation:

Cut the breasts into cubes. Sauté onions and garlic in hot oil and add chicken. Season with salt and fry for a few minutes. Then add the Chipotle Mex-Al Sauce and cook for about 5 minutes, finally add the peppers, rectify the seasoning and cook for a couple more minutes. Serve with white rice and flour tortillas.

Variation: Chicken "Tinga"* Express
Sauté an onion cut into strips, add the Chipotle Mex-Al Sauce and shredded chicken. Cook for a couple of minutes. Ready! Enjoy!

* "Tinga" is a typical Mexican dish. It is native to the state of Puebla, and is traditionally made with shredded chicken meat (it can also be prepared with beef or pork), cooked in a sauce based on tomatoes, spices and chipotle pepper. It is eaten as a filling for tacos or other specialties such as tostadas, quesadillas, etc
