4 tablespoons of oil (corn, canola, olive oil, or your preference).
12 clean and seedless chiles morita
2 large cloves of garlic
2 tomatoes
1 cup of hot water
salt to taste
1. heat oil in a frying pan over medium heat. Sauté the chiles in it for just a few seconds, it is very important not to burn them. Remove from oil and set aside. Soak half of the fried chiles in hot water for 8-10 minutes.
In the meantime, sauté the garlic in the oil in which the chiles were fried (about 1 minute). Add the tomatoes and stir-fry for 3 to 4 minutes.
Once the chiles are soaked, remove them from the water and put them in the blender with a few tablespoons of soaking water and add the rest of the ingredients. Blend everything to desired consistency, adding more water soaking water if needed. Season with salt and the sauce is ready!
Variation:
The tomatoes can be replaced with tomatillos (Mexican green tomatoes) and mixed with 125 g of finely chopped onions.
