Chipotle Mayonnaise

For centuries mayonnaise has been known and appreciated all over the world, so every country has its own different versions of it. In Mexico it is commonly mixed with chili, and one of the most popular versions is the one with chipotle chili. If you want to try it, here is our recipe, we hope you like it!

Ingredients:

1 egg M (at room temperature)

2 g salt

10 ml vinegar or lemon juice

200 ml vegetable oil or to taste

Depending on the desired spiciness, one or two chipotle chilies en adobo

Preparation:

Place the egg in the beaker of a hand blender and add salt, vinegar (or lemon juice) and oil.

Beat on low speed, making sure the mixer does not lift from the bottom of the beaker. When the mixture is emulsified, move the blender up and down until the desired thickness is achieved.

Finally, add the chipotles and blend again until everything is well mixed.

Enjoy with tortilla chips or in burgers, sandwiches, burritos and more!
