Frijoles Refritos (Refried Beans)

Beans are native to the Americas. They have been cultivated in Mexico since prehispanic times and, together with corn, are a staple of the Mexican diet. Beans are present in virtually all Mexican dishes. They can be found in appetizers, soups, stews, stuffings, side dishes, salads and even desserts. So, if you feel like trying this nutritious legume, here is a simple recipe for preparing some scrumptious refried beans that are a favorite throughout Mexico.

Ingredients:

500 g of cooked black beans (or another type of bean)

1x large clove of garlic (or more, depending on your preference), pressed

100 ml of water or, if you prefer, milk (the amount depends on the desired consistency)

oil for frying

2 medium white onions, finely chopped

 

To serve:

Fresh crumbled cheese

Tortilla Chips

Preparation:

Heat a little oil in a frying pan.

Add the onions and let them turn golden brown.

Add the garlic and sauté for a few seconds.

Add the black beans and sauté for a few minutes.

Now puree either in a blender or directly in the pan.

Add water or milk until desired consistency.

Add salt to taste, if desired.

Serve with crumbled shepherd's cheese and tortilla chips.
