Melted cheese with shrimp

Mexican cheeses range in types and varieties from region to region. One of the most popular cheeses among Mexicans is Queso de Oaxaca, a soft, mild and pleasant-tasting cheese made from cow's milk that is slightly salty and is also known as Quesillo. It is ideal for gratinating and as an addition to various snacks.

Ingredients:

500g of grated Oaxaca cheese
6 flour tortillas
1 tbsp. chopped cilantro for garnish (optional)
Lime wedges to garnish (optional)
300g raw shrimp, peeled and deveined
3 guajillo chiles, seeded and sliced
2 small garlic cloves
½ onion cut in thin slices
Salt
Pepper
2 tablespoons of oil
Salsa of your choice

Preparation:

Season the shrimp with salt and pepper to taste. In a skillet over medium heat, add the oil and cook the onion until transparent, add the guajillo chiles and sauté for 1 minute. Add the shrimp until they change color to their characteristic orange tone. Drain excess liquid and set aside.
Place the cheese in a small clay or cast iron pot (or any small container you can put on the grill) and place it on an indirect heat part of the grill. It may take 10 to 12 minutes to melt the cheese.
Remove from the grill and mix with the shrimp, along with cilantro if desired.
Serve warm with tortillas, lime wedges and your choice of salsa.
