Mexican caramel crêpes

Mexico has a great variety of desserts. These are the result of the integration of Mexican and European ingredients, whose fusion manifests the country‘s unique gastronomic culture. One of the most typical examples is the „cajeta“, a kind of goat‘s milk caramel.This simple dessert is guaranteed to delight your guests.

Ingredients:

for 6 servings:
375ml milk
60g all-purpose flour
1 egg
1 Tbs. oil
Butter
30g butter
250ml cajeta*
125ml orange juice
1 Tbs white tequila*
100g chopped walnuts

Preparation:

In a bowl, whisk together the flour, milk, oil and eggs and let the mixture stand for 5 minutes.
Meanwhile, grease a non-stick frying pan with butter and heat over medium temperature. Pour 1 1/2 Tbsp. of the batter and spread it evenly so that it covers the bottom completely. Let it cook for about 2 minutes, turn it carefully and wait for the dough to finish cooking, without browning. Repeat this step until the dough is finished.
To prepare the sauce, melt the butter in a saucepan, add the cajeta and orange juice and stir over medium heat for 5 minutes until the ingredients are well mixed. Remove from heat.
Finally, fold the crepes in quarters and dip them briefly in the cajeta sauce. Arrange 2 or 3 crepes on a plate and cover with a little more of the sauce. Add the tequila and flambé. Sprinkle with nuts and serve immediately.
