Mexican flat pastry with guava sauce

Corn tortillas, beans and spicy salsas are unmistakable products of Mexican cuisine worldwide. Less well known is that Mexican cuisine also has a wide variety of delicious desserts. One of the most typical desserts are the "buñuelos" or "hojuelas", a kind of sweet dough pastry, which are basically very thin wheat flour flat wafers fried in oil or butter and sprinkled with sugar and cinnamon. These are eaten mainly during the winter season. If you want to try them, here is a simplified recipe for quick and easy Mexican "hojuelas".

Ingredients:
  • 1 package of flour tortillas ø11cm/4".
  • 1 900g jar of guavas in syrup
  • 80g brown sugar
  • 1 pinch of cinnamon
  • 1 sachet of vanilla sugar
  • 1 tablespoon of water
  • 150ml of oil (for frying)

 

Preparation:

Defrost the flour tortillas.
Then either: air dry for 1 day or „dry“ for about 10 minutes in a preheated oven at 150°C.
Heat the oil and fry the tortillas briefly on each side until they bubble, then turn them over. Drain on kitchen paper.
Halve and seed the guavas, add the vanilla sugar and cinnamon and blend everything.
Heat the sugar in a saucepan, add the tbsp water and caramelise.
Now add the guava mixture and let it boil down for about 5-8 minutes, stirring constantly.
Serve with fruits, ice cream, icing sugar or whipped cream and enjoy.
