Mezcal

Mezcal is made from the flesh of various types of agaves. The cooking process is still very traditional today. It takes 6-10 years until the agave suitable for the production of Mezcal. Afterwards the Mezcal is  stored in wooden barrels from two months to seven years, giving it a golden yellow color as well as the aroma of the barrel’s wood. The darker the Mezcal, the longer it has been stored and the more distinctive the aroma.
