The corn used in Mexico for the production of tortillas has no relation with the sweet corn or corn semolina (polenta), which is rather well-known here in Europe. In Mexico there are many different types of corn (including blue and red corn) which are used for the production of corn tortillas. This corn has undergone a nixtamalization process, which makes it virtually impossible to make tortillas without it. The corn flour we offer is all GMO and gluten free!
