The Puya chile is a dark red, spicy, pointed chili pepper. It looks like a smaller version of the guajillo chiles and is used to add spice to stews or sauces.
Chocolate is native to Mexico. The Aztecs prepared it in drinks and dishes by combining it with different spices, a tradition that has lived on to this day. The most representative example of the use of chocolate in a main dish is mole poblano, an unsweetened chocolate sauce made from a mixture of various chiles, nuts, tomatoes and spices.
