Gazpacho nach mexikanischer Art

Gazpacho is a cold soup that originated in Andalusia, Spain. Made with freshly pureed tomatoes, cucumbers and green peppers, it is a real treat on hot days. On this occasion, we have prepared the traditional Andalusian gazpacho Mexico-style by substituting some ingredients with typical Mexican ones. Here is our recipe, you will be thrilled!

Ingredients:

800g tomatillos (Mexican green tomatoes)

1/2 green bell pepper

1/2 cucumber

1/2 clove of garlic

¼ to 1/2 white onion 

40g tortilla chips salted

1 tbsp olive oil 

½ tsp salt

1/2 bunch cilantro 

For garnishing 1 ripe avocado, fresh cilantro and red onion (optional)

Preparation:

1. strain the tomatillos, rinse them with water and put them in the blender. Add the bell pepper, cucumber, onion and garlic in chunks. Finally, add the tortilla chips and cilantro and blend well until the mixture is somewhat thick and smooth. If necessary, add a little water.

2. now add salt and olive oil to taste. Blend further, adding more seasoning if necessary.

3. put the mixture in a bowl and refrigerate until very cold.

4. serve topped with diced avocado, fresh cilantro, red onion strips and a few drops of olive oil.
