Green Mole with chicken

Mole is an important part of Mexican cuisine. There are many different types of mole: mole poblano, mole negro, mole coloradito, mole amarillo and mole verde, to name but a few. This time we would like to present our recipe for green mole. Although there are countless recipes for making mole verde, certain ingredients, such as pumpkin seeds and chili peppers, and other optional ingredients, such as green tomatoes, poblano chiles, scallions, radish leaves, celery, cilantro, lettuce leaves, chard, parsley, epazote, onions, garlic, chicken broth, and, in smaller quantities, bolillo or tortilla, must be included in the preparation.

Ingredients:

1 kilo of chicken pieces (breast, leg and thigh with skin)

2 onions, cut into strips

1 clove of garlic, minced

1 bread roll (optional)

6 tomatillos, roasted or canned

1/2 serrano chili, fresh, frozen or canned

175g poblano chili pepper strips

300g chicken stock (homemade or instant)

25g fresh cilantro

2 heads lettuce or Swiss chard

3 Tbsp toasted and ground pumpkin seeds

Oil to taste

Preparation:

1 kilo of chicken pieces (breast, leg and thigh with skin)

2 onions, cut into strips

1 clove of garlic, minced

1 bread roll (optional)

6 tomatillos, roasted or canned

1/2 serrano chili, fresh, frozen or canned

175g poblano chili pepper strips

300g chicken stock (homemade or instant)

25g fresh cilantro

2 heads lettuce or Swiss chard

3 Tbsp toasted and ground pumpkin seeds

Oil to taste
