10 roasted tomatillos (frozen product) or one 800 g can of tomatillos
1/4 onion
1 chile of serrano or jalapeño (fresh or frozen)
1 clove of garlic
½ bunch cilantro
1 teaspoon salt
1 teaspoon oil
Place tomatillos, onion, garlic, serrano or jalapeño chile and cilantro in blender.
Blend well and season with salt.
Heat the oil in a saucepan and sauté the mixture for about 3 minutes or until the sauce changes color.
If necessary, add a little water until the desired consistency is reached.
The salsa is ready! Enjoy it with your favorite tacos.
Variations: If using fresh tomatillos, place them peeled and clean in a pot of water with the onion, garlic and chile and bring to a boil. Once they change color, remove them from the water and proceed as you would with frozen or canned tomatillos.
If you want to make the sauce with fresh, roasted tomatillos, roast them on a griddle along with the garlic, onions and chili until they are lightly toasted, and then proceed as indicated in the recipe.
