Ingredients for the patties:
3 medium-sized potatoes, boiled and peeled
1 can of tuna (approx. 200g), very well drained
1 egg
1/4 teaspoon oregano
1 teaspoon of salt
¼ Onions, finely chopped
1/3 cup breadcrumbs
1/2 cup chopped coriander
Ingredients for the sauce:
500g avocado pulp
1/2 bunch coriander
1/4 cup of olive or sunflower oil (to taste)
1 tablespoon of apple vinegar
The juice of a lemon
¾ Onion
4 Serrano chilies (or to taste)
2 garlic cloves
Salt to taste
1. Mash the potatoes until a homogeneous consistency is achieved.
2. Add the egg to the potatoes and mix well.
3. Add the tuna, coriander, onion, salt and oregano, mix well and gradually add the breadcrumbs until a smooth dough is obtained.
4. Put some oil in your hands and shape the patties to the desired size.
5. Heat the oil and fry them until golden brown. Drain on kitchen paper.
6. For the sauce, heat the oil in a pan and sear the garlic and chillies until golden brown. Let the chilies cool down together with the oil and put into the mixer. Blend them with the avocado pulp, coriander, lemon juice, onion and salt to a creamy sauce. If it is too thick, add some more water or lemon juice.
7. Serve the patties with the avocado-coriander sauce. Enjoy your meal!
