300g King Oyster Mushrooms
10g Chilorio spice mix from @mexal
Juice from one large orange
1 Tbsp White wine vinegar
1/2 large white onion
2g (small handful) parsley
2 Tbsp oil to fry
Toppings:
Yellow corn Tortillas for frying from @mexal
Oil to fry
Lime juice
Feta or Mexican cheese
Pickled onions
Salsa of choice, ex. tomatillo salsa
Pimientos de Padron or Chilis
1. clean the King Oyster Mushrooms and pluck them into fine strips with a fork or your hands.
2. Prepare the marinade by mixing all the ingredients listed. Use a high-powered blender to blend. Pour the mixture over the mushrooms and let marinate in the refrigerator for 3-4 hours (or overnight).
3. place the marinated mushrooms in a hot, oiled pan and simmer for about 20-30 minutes or until the remaining marinade has reduced. Season with salt and pepper if needed.
4. Serve with tortillas and the toppings of your choice.
