When you hear the word candy in other countries, you usually imagine something that tastes like fruit, sugar and syrup. Mexicans, however, have a slightly different idea of sweets.
Unlike many other spirits, mezcal is a distillate with different expressions that depend not only on the agave from which it is made, but also on the soil where it is harvested. Mezcal is best drunk in small sips to better appreciate its characteristic flavor.
Quesadillas are very popular in Mexican cuisine. These tortillas, folded in half and filled with an ingredient of your choice, can be found in all regions of the country, at street stalls, markets or fancy restaurants. There are countless varieties and the list of possible fillings is endless. They can be heated on the Comal (cast iron flat frying pan) or fried in oil, and are delicious in any variation.
Definitely, the enormous variety of dishes in Mexican cuisine is an advantage when it comes to transforming Mexican dishes into both vegetarian and vegan versions. It is enough to substitute animal ingredients, at will, for vegetarian ingredients or other suitable vegan food, as in these vegetarian tofu tacos.
