Pipian in Mexico is a pre-Hispanic dish consisting of a mixture of roasted and ground pumpkin seeds with dried chiles, tomatoes and numerous other ingredients. This time we prepared a red pipián with guajillo and ancho chilies and of course pepitas (=pumpkin seeds). We topped rolls with it and garnished them with jalapeños and avocado.
